The warm heat of Hot Ginger chocolates has proved very popular at the Halo Baking Emporium and Chocolaterie in Birmingham UK. Recently these fiery little delights overtook the Sea Salted Caramels and Pistachio Cardamom and Rose Brittle as the highest selling chocolate. Not surprising really when you consider that three different types of ginger combine in the dark chocolate shell to provide that spicy punch of ginger heat and taste.
A wonderfully long process of experimentation led to the final design for these. Raw ginger proved too crunchy, and even with the addition of some powdered and crystallised ginger the sweetness levels weren’t quite right. The dark chocolate shell and ganache could drown out the spice aroma and heat, however the addition of milk chocolate diluted the tastes into something a bit too insipid to ever wear the Halo Baking Emporium and Chocolaterie’s colours.
Finally, the perfect combination was arrived at, along with a cheeky twist to the visual presentation. Chopped crystallised ginger is pressed into moulds which are then lined with dark chocolate, leaving the crystallised slices revealed in a little tease of the contents. These shells are filled with a dark chocolate ganache that contains both powdered and finely chopped sweet syrup soaked ginger, before being capped with a final layer of finest dark chocolate. A treat for the eyes and the tastebuds!
These Hot Gingers have been the perfect pick me up as Birmingham UK trudges into its third week of seemingly solid rain; at the point where the sky matches the pavement you really need a warm spice explosion to remind you that sunshine and heat still do exist!
